st-patricks-day2-795x497I had a few friends ask if I would do something for St. Patrick’s Day and I was happy to oblige. However, Murphy’s Law got into full force last night. (Now wasn’t Murphy an Irishman? Hmmm!)

The first idea that popped into my mind was an old favorite book of my niece and nephew when they were 4 and 3 years old – their very well-loved book childhood book Green Eggs and Ham by Dr. Seuss.   (Click on the book cover to learn about Dr. Seuss and his books.)Greenegg

So my husband came home to a wonderful surprise for dinner last night! With a tablespoon of pureed fresh spinach I served  GREEN Crust-Less Broccoli & Bacon Quiche. Oh my! 🙁 It is true that we eat with our senses and I definitely qualify high in the visual category. As long as I closed my eyes it tasted great. With my eyes open I could not get past the fact that it was Grinch-green (a favorite Dr. Seuss story).

To cut a long story short, NO GREEN EGGS TODAY.

Instead I have a couple of different recipes coming later today.
