Craving Life Green Guacamole

My husband and I love home-made guacamole yet the recipe is a bit time-consuming especially if I am already making an elaborate dish. So I had a light bulb ūüí°moment to make a quickie green guacamole.

endiveGuacamole is a traditional Mexican dish made of mashed avocado, tomatoes, onions, and seasonings.  Recall my recipe for Salsa Verde Fish Fillet posted earlier in the blog? Salsa Verde is a salsa that uses tomatillos instead of tomatoes as it base ingredient. The tomatillo, native to Mexico, is a relative of the tomato being part of the nightshade family.  So naturally, Green Guacamole was born. 

I like to serve this with chicken quesadillas, tortilla chips, or Belgian endive (shown on the right).


Green Guacamole

Serves: 250 ml (1 cup)
  • 125 ml (1/2 cup) salsa verde of your choice
  • 1 ripe avocado
  1. Mash the avocado.
  2. Mix together the avocado and the salsa verde.
  3. If not serving immediately, cover the surface of the green guacamole with plastic film removing any air pockets.
