Craving Life Tomato Olive Feta Salad

Ripe tomatoes are coming into season so it is a perfect time to make a favorite salad of mine. Bursting with complimentary flavours, it makes a wonderful side to grilled or roastedĀ meats and seafood. Beats French fries hands-down! šŸ˜‰

Omit the feta cheese if you have a concern for sodium.

I prefer to used whole kalamata olives for this recipe and just warn people that they are unpitted. Feel free to pit them in advance if you prefer.
Serves: 4 Servings
  • 1 bunch of basil
  • 30 ml (2 Tbsp) red wine vinegar
  • 30 ml (2 Tbsp) extra virgin olive oil
  • 6 medium-size tomatoes (ripe)
  • 50 grams (1/4 cup) red onion, thinly sliced
  • 80 grams Greek Feta Cheese
  • 16 kalamata olives (preferred) or black olives
