My husband and I love home-made guacamole yet the recipe is a bit time-consuming especially if I am already making an elaborate dish. So I had a light bulb 💡moment to make a quickie green guacamole.
Guacamole is a traditional Mexican dish made of mashed avocado, tomatoes, onions, and seasonings.
I like to serve this with chicken quesadillas, tortilla chips, or Belgian endive (shown on the right).
- 125 ml (1/2 cup) salsa verde of your choice
- 1 ripe avocado
- Mash the avocado.
- Mix together the avocado and the salsa verde.
- If not serving immediately, cover the surface of the green guacamole with plastic film removing any air pockets.
